Mexican-Style Eggs in a Nest

Have an egg-celent lunchtime like what Mexicans do. Try this Mexican-style eggs in a nest.

Makes: 4

Preparation Time: 30 minutes

Ingredient List:

• Pinch of iodized salt

• Pinch of ground black pepper

• ½ cup of Mexican seasoning

• 1 cup of cheddar cheese, shredded

• 2 cups of hash brown potatoes, refrigerated and shredded or frozen and defrosted

• 4 eggs

How to Cook:

1. Pre-heat oven to 375°F

2. Using a bowl, combine potatoes and cheddar cheese. Sprinkle the Mexican seasoning and mix well

3. Pour mixture evenly on greased custard cups or ramekins. Press against the bottom and halfway upside. Place it on a baking sheet

4. Bake at 375°F for 10 minutes. Break and pour an egg on each makeshift potato nest. Bake until the egg whites are set and yolks thicken.

5. Dash in salt and pepper and serve
